Ah, Nebbiolo - classic Italian wine at it's finest. This year I abandoned Paso Robles for a newly-planted vineyard in San Benito where it is ever-so-slightly cooler than Paso. What does that mean? A bit more hang time before peak ripeness, and perfect stems to include in a Whole Cluster fermentation, something that pairs so well with this wine.
With the stems and grapes together we get a wine with both bright, giving, aromatics, but also some more wooded and nutty notes. We also get layers of tannin that make for a Nebbiolo that pairs beautifully with cured meats.
