Cabernet Sauvignon 2017

Varietal: 93% Cabernet Sauvignon, 7% Merlot
Appellation: Central Coast
Vinification: Cabernet 100% de-stemmed, Merlot 100% whole cluster. Gently punched down over the course of fermentation followed by basket-pressed in to barrel.
Aging: 12 months 2nd fill French Oak
Production: 2 barrels Cabernet, plus one keg of Merlot 61 cases

My second go around with Cabernet! After the wild, run-away, success of the first vintage I went in to the 2017 vintage enlivened, but I also had in my mind the question: How can I improve on what I’ve previously done? The answer presented itself in glorious fashion when by friend Bryan got some Merlot in to his winery.

As you may, or may not, know: the winery that I produce at is owned by Bryan Harrington where he makes his own stellar wines in tandem. It’s a tight knit group who all helps one another in the production during the chaotic harvest season. 

I had fallen in love with the Merlot while seeing it progress through the vintage before bottling. It had a woody quality from the whole cluster, matched with a bright cherry note and fresh acidity. The perfect match for the big berry pie-filling and vanilla qualities that the Cabernet brings to the table. I still wanted the final blend to ring true to the heart, and nature, of the Cabernet and found that the delicate touch of just 7% Merlot was enough to lift the wine and bring a really satisfying Bordeaux driven experience.
