Vinification: 100% de-stemmed. Gently punched down over the course of fermentation followed by basket-pressed in to barrel.
Aging: 12 months 2nd fill French Oak
Production: 2 barrels, 43 cases
Well, well, this is new. Cabernet Sauvignon. I have broken my oath that I'd never make a Bordeaux varietal. Why you may ask? The fruit: amazing! Just biting in to the grape you get the minerality from the limestone - and the price was right.
I was drawn to the fact that these vines were grown on the Farallon plate - a series of rock complexes that is slowly disappearing and one of the oldest on the planet. In it is the Calera Limestone which is what gives many Santa Cruz Mountain Cab's their fine balance of floral notes, all layered in to a menagerie of blueberries and cassis, yet finishing dry and soft from that terroir. Something just plush and hedonistic. I'm a fan, and I'm definitely going to be making more in the future!
